Mini meatloaves

Serves 4.

  1. 17 crushed saltines
  2. 4tb whole milk
  3. 2tb parsley
  4. 3tb worcestershire
  5. 1 egg
  6. 1.5tb dijion
  7. 1tsp onion powder
  8. 1tsp garlic powder
  9. s&p
  10. 12oz 90% hamburger
  11. 12oz ground pork
  12. 1tb oil
  13. 1/2 cup ketchup
  14. 4tb brown sugar
  15. 4tsp cider vinegar
  • Preheat oven to 500.
  • Mix 1-11, divide into 4 portions, and brown 3 minutes each side.
  • Mix 13-15 and glaze loaves. Place in oven for 15 minutes.

America test kitchen roast chicken

Serves 4

  1. 3.5-4.5lb whole chicken
  2. 1.5tsp salt
  3. 1tsp baking powder
  4. 1/8tsp oil
  5. 1/2tsp pepper
  • Poke fat deposits on bird and loosen skin.
  • Mix 2-5 on skin, tie legs, and tuck wings.
  • Rest breast side up on a rack on a baking sheet uncovered in the fridge for 12-24 hours.
  • Preheat oven to 450 and leave bird out to get to room temperature.
  • Cook for 25-35 minutes, turn oven off and cook for 25-35 more minutes.
  • Take out, tent with foil, and rest 20 minutes.

Huge goddamn pot of creamy cheesy shrimp and bacon linguini

Serves 24, holy fuck.

  1. 3lb linguini
  2. 1/2 cup oil
  3. 1/2 cup fresh basil
  4. 1/2 cup fresh oregano
  5. 12 cloves garlic
  6. 12 plum tomatoes
  7. 2 cups scallions
  8. 1lb chopped bacon
  9. 1 quart half-n-half
  10. 1 cup parmesan
  11. 1 cup monterrey jack
  12. 4lb shrimp
  13. 1tb salt
  • Prepare water for cooking pasta. Cook bacon and set aside. Cook shrimp in bacon fat and set aside.
  • Cook 2-5 on medium heat for 2 minutes.
  • Add tomatoes and scallions for 5 minutes.
  • Add 8-11 until cheese is melted and incorporated.
  • Add salt and simmer 10 minutes.
  • Meanwhile, cook linguini.
  • Add shrimp and pasta to sauce and simmer 1 minute. Serve.

Spiced Mandolines

12 large or 36 mini.

  1. 3/4 cup flour
  2. 1/2tsp baking powder
  3. 1/2tsp ginger
  4. 1/4tsp cinnamon
  5. 1/8tsp clove
  6. Pinch of s&p
  7. 1/3 cup sugar
  8. Zest from half an orange
  9. 2 large eggs
  10. 2tb honey
  11. 1tsp vanilla
  12. 6tb cooled melted butter
  • Whisk 1-6.
  • Combine sugar and zest in separate bowl. Mix in eggs for 2 minutes.
  • Mix in honey and vanilla, then fold in flour and butter. Preheat oven to 400.
  • 11-13 minutes for large cookies, 8-10 for minis.

Mushroom Soup

Serves 6

  1. 2tb butter or oil
  2. 1.5 onions
  3. 3 cloves garlic
  4. 1.5lb white shrooms
  5. 1/3 cup white wine
  6. 2tsp parsley
  7. 1tsp rosemary
  8. 6 cups chicken/vegetable broth
  • Brown onion and garlic in 1tb butter or oil with s&p on low 5 minutes.
  • Add 1tb butter or oil and shrooms on medium 3 minutes.
  • Evaporate wine.
  • Add parsley and rosemary for 1-2 minutes.
  • Add broth, simmer for 20 minutes, and puree.
