Brandied White Chocolate Vanilla Latte

SERVES 8

  1. 4 cups whole milk
  2. 1 vanilla bean pod
  3. 10oz chopped white chocolate
  4. 2.5tsp vanilla extract
  5. 2.5tsp brandy
  6. 4 cups coffee
  • Scape seeds from vanilla pod into milk, add pod. Bring to a boil.
  • Remove from heat and whisk in 3-5. Bring to simmer and whisk to create foam.
  • Divide coffee into 8 cups. Add milk + foam.

Maple bundt cake

Use 12 cup pan

  1. 2 cups flour
  2. 2tsp baking powder
  3. 1/2tsp baking soda
  4. 1/4tsp salt
  5. 1 1/3 cup sour cream
  6. 1/4 cup maple syrup
  7. 1/2 cup walnuts
  8. 1 1/3+1/4 cup maple sugar
  9. 1/4tsp cinnamon
  10. 13tb butter
  11. 2 eggs
  12. 2tsp vanilla extract
  13. 1 1/3 cup powdered sugar (for glaze)
  14. 3tb sour cream (for glaze)
  15. 1tb maple syrup (for glaze)
  16. 1.5tsp lemon juice (for glaze)
  17. 1/2tsp lemon zest (for glaze)
  18. 1tsp vanilla extarct (for glaze)
  • In separate bowls, combine 1-4(a), 5-6(b), walnuts/cinnamon/.25 cup maple sugar(c), rest of sugar/butter(d).
  • Beat eggs/vanilla in d. Alternately mix in a/b/a/b/a.
  • Pour 2/3 of batter in pan. Add c, then rest of batter. Bake at 350 for 55 minutes.
  • Cool for 20 minutes, run butter knife around edges of pan to loosen and finish cooling on a wire rack.
  • For glaze, whisk¬†everything, rest for 30 minutes and glaze cake.

scallopped goat cheese potatoes

  1. 1.5 cup heavy cream
  2. 1.5 cup chicken broth
  3. 1 cup white wine
  4. 1/2 cup shallot
  5. 3 garlic cloves
  6. 4tsp herbs de provence
  7. 11oz goat cheese
  8. 4lb potatoes
  • Simmer 1-6 in very large pot. Whisk in half of cheese.
  • Add potatoes, bring to simmer, and place in an even layer on a baking pan.
  • Cover and bake for 15 on 400. remove cover and continue for 50 minutes.
  • Top with remaining cheese and continue for 5 minutes. Let rest for 15 minutes before serving. If sauce thin, cook 10-15 more minutes.

green chile stew

SERVES 6

  1. 1 onion
  2. 1tb olive oil
  3. 2lb pork shoulder
  4. 3tb flour
  5. 15 green hatch chilies, roasted, skinned, deseeded and diced
  6. 3 cloves garlic
  7. 1tsp cumin
  8. 1tsp salt
  9. 1.5 cups vegetable broth
  • Fry onion in oil in medium pot for 5 minutes. Add pork and brown.
  • Add flour and cook a few minutes. Add the rest of the ingredients and simmer for 2-3 hours.
